I'm kind of breaking away from the normal use of this blog and decided to set up a recipe blog so anyone can see what exactly this crazy family eats every day. We are very consistent and dedicated to good health. We have a unique way of eating that has brought us health and happiness.

Breakfast: oats (I'm really liking macademia nuts, banana and blueberries on mine lately)

Lunch: Salmon and steamed potatoes (I always add parsley, garlic powder, dill and salt to both..olive oil to the potatoes)

sides: garden cucumbers and our first garden tomato

Dinner: Cold cereal...can't remember the name...some fake cheerios w/ dehydrated strawberries. Not bad but not my favorite..I really like raisin bran and this kind called puffins.

Dessert: My favorite cookies at Good Earth were on sale and I brought some home. I can eat an entire box by myself..they are soooo good.

Dinner: Garden Veggie Lasagna Supreme

I'm pre-blogging this today so I'll just tell my idea for the recipe and then maybe I'll actually look one up on-line to help me not mess this up. My idea is to saute some zucchini, squash and green beans together with garlic and some other spices I haven't decided ye. I'll have that be the bulk of my lasagna. I'll add grated cheese and some chicken sausage in the layers and call it almost vegetarian but very good for using up garden veggies. I'll let you know how it turns out.

Okay..I looked up some recipes and am trying the crazy and cool idea I found online. You actually use the giant zucchini from your garden sliced up as the lasagna noodles....I did that and then made a tomato, squash, green bean, and italian spice sauce in the blender which I poured over the "noodles" I added the sausage and cheese to the layers. It's still cooking...I may steam the "noodles" first because it's going on 2 hours in the oven to achieve the tenderness I was looking for and that's a bit long for me.

Okay final comment on this venture. It tasted great..I got impatient and took it out before it reached it's full tenderness so it would have been a little bit easier to chew if I'd cooked it until really really tender..all in all it was a success.

sides: garden cucumbers...I am so happy I planted 12 plants this year and get a cucumber for dinner or lunch almost everyday.

FHE treat: Gramwiches...more of those cookies I could eat all by myself. I bought 4 boxes thinking they'd last a few weeks....

Breakfast: oats  but I had raisin bran and Jenny bought herself some special cereal at Good Earth and then ate it in front of everyone...it was a lovely start to the day. 

Lunch: Tuna Casserole

Dinner: We've eaten beans all week but I'm still going to try and see if I can get my kids to finish them off...I liked the bean soup I made last night....maybe if I have a good dessert  to bribe them with they will all eat beans for the fourth time this week without complaining..

Dinner: Calzones..these were so good last time we had to make them again...I had my older kids do most of the work for them and they were very proud of the delicious meal they made.

Breakfast: Pancakes and fruit at the Provo River Half Marathon. Sasha helps Curt the race director with his website and Curt always invites our whole family to come enjoy the fun. 

Lunch: Scrambled Eggs ( Sasha took the big kids out for a lunch treat and me and the little ones had this)

Lunch; Pita Pockets

(homemade pita pockets stuffed with adzuki beans and barley, garden tomatoes, salsa and cheese)

Dinner: Raisin Bran...needed something easy..making pita pockets is more involved than I usually do..although it was pretty simple it just adds more time and more clean-up.

I have some kind of exciting news. I was contacted by the director of diabetic research at New Mexico University today. They are putting together a cookbook for diabetics as part of their extension services and wanted to use some of my recipes. It kind of gave me a kick.

Breakfast: oats and milk

Lunch: Picnic in Salt Lake with my sister and her 5 kids. We had bean burritos, baby carrots, baked cheetos and apples. It was a free lunch program for kids they do during the summer. (to make sure kids are fed by their parents during the summer I guess?? )

Dinner: Apricot Muffins and Pina Colada Banana Smoothies.

I got a million apricots from a friend..made it into a bunch of syrup..that I planned on using on top of waffles. My kids don't really like the syrup so I used it to sweeten and liquify the muffin batter I made this morning. Worked like a charm.

Then I went to my favorite store this morning and they had my dream come true...a box of bananas(like 25 pounds or so) for $6.00..yay!!! I also bought some juice for cheap and we are going to have smoothies and banana bread galore this week.

Breakfast: oats and banana smoothies (we will be having lots of banana things this week to eat up our bananas) I will also freeze some of them. Then I put them frozen in our K-tec awesome blender and it creams them into an amazing banana ice cream. I add a tiny bit of soy milk to it and that's it. It's really sweet and creamy.

Lunch: Tuna Sandwiches

We now have an overload of bread. I went to my favorite store in Salt Lake yesterday that sells the bread we buy at Costco for 3.00 for only 1.00. I've stocked up and am very happy. We really don't eat sandwiches very much because it's a pain to bake that much bread and it's expensive to buy the kind we eat. Also I still feel like I get more full and feel better after a cooked meal with whole grains, beans or meat. But if I have the bread and it needs to be eaten I'm happy to have a easy meal of sandwiches. Maybe we'll have French Toast for dinner tonight...we'll see...I'm still deciding.

Dinner: Pasta and baby carrots...soccer season is here and I need to get organized. It should be better this year because his practices are at 7 at night instead of the insane hour of 5...dinner time..or dinner making time at least. 7 will be great and then there's the games to figure in but Daddy helps out a lot by taking Benjamin to a lot of the games so that helps.

Breakfast: Peach Cobbler....I LOVE August and I love Allred's fruit stand in Provo that sells me a huge box of peaches for $6.00. Someone amongst the craziness of going to a water park in the afternoon and soccer in the evening I managed to whip up some peach cobbler. We loved it for breakfast this morning and I'm sure it will be gone by noon tomorrow.

Lunch: Yummy Supreme Harvest Blend (this would be lentils and rice topped with a fabulous garden sauce- I sauted garlic and onion in some olive oil and added tomato sauce, chopped zuhcinni, squash, and green beans. It was delicious)

sides: Yummy Supreme Havest Salad- chopped squash, zuhcinni, cucumbers, and tomatoes with a light olive oil/garlic dressing...superb.


Dinner:  Banana Pancakes and banana/peach  smoothies.

Breakfast: Oats and Milk..the peach cobbler lasted until noon yesterday...I'll be going to get more peaches today. I was a good girl this time and actually got some in the freezer.

Lunch:   PB and J sandwiches

Dinner: Fix your own....these types of meals are fun and crazy. I had leftover pasta and everyone else had crazy combinations of whatever they were in the mood for.

Lunch: Barbeque Chicken and Basmati Brown Rice

I cooked the chicken and rice together with a lot of water and about 1/2 of cup of barbeque sauce. It resulted in a very mild tasting chicken and delicious moist chicken barbeque rice. Sasha had thirds so I'll probably make this again.

Dinner: Grilled Cheese Sandwiches

Breakfast: oats and milk (I had wheat puff cereal..um...drawing a blank on the real name...sorry) Then around 10 I had eggs...The baby must be growing because I'm starving and exhausted today.

Lunch: Pizza Pockets

Dinner: Pizza Pockets ...I made lots and they were gooood

I made the coolest thing yesterday that I'm so proud of. We'll see how proud I am when we try eating it. I got the idea from my mother-in-law who is an excellent cook. She knows how to make anything taste wonderful and always prepares us delicious meals when she is here. She took some of the zucchini from our garden and...pickled it!! I'd never in my life thought about it but it is actually a great thing to do with lots of zucchini and it is the only way Sasha will eat the stuff. I did a conservative 5 jars because I'm just trying it out and I didn't can it so it's just sitting in my fridge. I liked the taste of the brine I made so I think it will turn out well.

Dinner: Annie's All Natural Organic Bunny Mac and Cheese ...or something like that...Jenny found a pink box of bunny shaped pasta at Good Earth yesterday and she had to have it..it was her 8th birthday...she was so excited about it...I did make a fuss over her but in some ways I wish I'd made a bigger fuss...she was so cute all day long, "I can't believe it's my birthday." or"Oh...I just remembered...it's my birthday."  Her two favorite things in the world are the color pink and her trusty stuffed bunny...the meal was perfect. :)
