I feel kind of sheepish doing this but I think it will be helpful to alot of people. The kids and I eat a little bit differently from Sasha. For now I'm going to just put what the kids and I eat because Sasha usually just eats oats, dates and nuts twice a day without much variation besides what I fix for snacks or lunch. Breakfast: Oats, Milk/soymilk, Homemade Granola(I don't think I have this recipe up but it's a very basic granola recipe with oats, agave, cinnamon, sunflower seeds, coconut and raisins. Lunch: Sloppy Joes (ground turkey, kidney beans) on Fresh Homemade Bread sides: Buckwheat and organic baby carrots
Dinner: Freedom Fries (pan fried potatoes...this recipe is on Healthy Recipes) with organic ketchup (can't remember the brand right now but it is from our local Health Food Store) I have made my own ketchup and have a recipe posted for it but it doesn't taste the same as store bought and I really do prefer that taste. sides: sliced apples (Frugal note: I bought a box of these apples at a store called NPS in Salt Lake City that sells about to go past their date food for cheap. I got 40 pounds of apples for $10) In the summer I will go and pick fruit from my neighbors trees that they aren't eating and serve this to my kids with meals or for snacks. We have a garden and eat out of there in the summer too. This year the garden may not be as fruitful because of crazy weather. I don't plant a huge garden but I do a little bit of gardening.

Breakfast: Oats w/ soymilk or milk (the girls and I do milk, the boys are lactose intolerant and drink soymilk) topped with homemade granola. Lunch: Whole wheat angel hair pasta (I buy Heartland brand from Wal-mart...much cheaper than the health food store brand and satisfactory quality) Homemade spaghetti sauce with sauteed mushrooms. The kids and I top this with Parmesean cheese sides: homemade bread with butter/honey/jam/garlic (sasha likes his with honey and garlic...yuck) organic baby carrots Dinner: Homemade Pizza (it must be Italian day) Sasha likes his without cheese. I put plenty of cheese on top for me and the kids. Sometimes I buy chicken sausage from Costco for a yummy pizza topping.

Even though we eat the same breakfast day after day I guess I just want people to see that that's really what we do. I vary our breakfast sometimes but if I make granola we definitely enjoy eating that. That is one way to keep things cheaper. Keeping your recipes simpler gives me more time to have a little bit of a life outside the kitchen and things are a bit cheaper that way. I do, however, try to provide variety for the health benefits I think it brings.

Breakfast: Rolled raw oats with soymilk/milk and homemade granola. sides: Cantelope Lunch: Revisted Homemade Cheese Pizza sides: grapes/baby carrots We almost always just drink water with our meals. I'll let my kids have milk if they ask for it but I'm into simple. Sometimes I make homemade rootbeer with rootbeer flavor and agave to sweeten. I love rootbeer....I also make it into popsicles for later. I also often buy fresh limes and squeeze some into some water with a bit of agave. Mostly I push water because it's free.
Dinner: Steamed Salmon w/ Red potatoes ( I'll add dill and olive oil to the steamed potatoes and some dill and braggs liquid aminos-similar to soy sauce- to the salmon) sides: cucumbers/watermelon Dessert: Fresh homemade cinnamon rolls (I've been using my Bosch alot this week. I make these rolls with my same basic bread recipe only add butter and fructose and cinammon)

I thought I'd make note of the groceries I bought this week. This is partly for me to see what we buy and how often. Costco: 2 pounds Salmon, 10 pounds red potatoes, 2 gallons milk, 1 bag tortilla chips, 1 bag rice chips(for the barbeque), 1 pound blackberries, 1 pound blueberries, 2 cases soymilk, 2 loaves whole wheat bread, 1 box of organic raisin bran, 1 carton natural omega eggs, 1 case pull-ups. Reams: 1 watermelon, 1 cantelope, 1 honedew melon, 2 cucumbers, 4 small cartons cottage cheese. Good Earth: 5 pounds fructose Breakfast: Raw rolled oats and granola with soymilk/milk sides: honeydew melon Lunch: Creamy Split Pea Soup ( I put the typical carrots, onions, celery jazz in and then blend it in the blender to make a very delightful soup on a cold June day)
Sides: baby carrots/ salsa fresca rice chips Dinner: Creamy Pea Soup...five hours old.... sides: rice chips/grapes A couple of my kids only got one of the cinnamon rolls I made yesterday so I woke up and made a fresh batch this morning....the magic of a Bosch...awww... They still ate the soup after stuffing their little faces on sweet rolls. Joseph who rarely eats thirds asked for thirds of soup. He loves green and I guess that's why he wanted more green soup. :)

Breakfast: Granola , granola, granola...we are almost out of it and I actually am getting tired and had a bowl of raisin bran this morning. I think I'll try cooking oatmeal next week if I can get organized. The kids wake up right when I'm done running and want to eat right away. Lunch: Mashed Potatoes I boil red potatoes whole. I leave the skins on partly because I'm lazy and partly because I like them. I leave a bit of potato water in them for mashing and add olive oil and salt to taste. Sometimes I get fancy and sprinkle some parsley on top. The kids eat it with organic ketchup and Sasha sprinkles flaxseed crackers on top. sides: green salad I put a spoonful of veganaise and a dash of garlic powder on the salad and my kids gobble the salad up. Don't tell them about the garlic. Dinner: Turkey Sandwiches sides: grapes, rice chips, cookies (from good earth they were on a sale for an amazing price....I should go back and get a case!) We are going to eat it picnic style at the Stake Bar B-Q.They don't usually serve super healthy food at these functions and we try to just bring our own "cool" stuff so the kids don't feel bad. I like hamburgers but am happy not to eat them most of the time. | |

Breakfast: The granola is gone. My 3 year old demanded that I produce more granola that instant...he is usually pretty good with his demands but I guess didn't quite understand this time. So, we had raw rolled oats with milk and agave. My kids adore this combination and I'm pretty happy with it too. Lunch: Tuna Casserole (veganaise mayo, pickles, cucumbers, tomatoes and sunflower seeds) sides; watermelon and a very few sugar snap peas from our garden :) Dinner: Rhubarb Crisp I didn't have any shopping to do this afternoon and felt ambitious so we picked the rhubarb in our backyard and made a delicious dessert...for dinner. I will feed my kids apple crisp or peach cobbler for dinner sometimes too. | |

Breakfast: Oatmeal (agave, cinammon on top) sides: homemade whole wheat bread w/ all fruit jam (I buy smuckers all fruit jam at Wal-mart for the best price I've found for sugar-free jam) Ask me sometime to tell you about the failed jam experiments I've done. One batch in particular still sits on my shelf and bears the title "Texas Barbeque Jam" Lunch: Baked Chicken ( I marinated the chicken legs last night w/ braggs, coriander and sage. I'll probably add some more braggs and then bake them for an hour. I've started always covering the chicken I bake so it's more tender and doesn't dry out) sides: barley ( I added this to the chicken to let it soak up all the juices..yum) cucumbers , watermelon, fresh garden peas (I leave these out of the salad because Sasha doesn't like them in) Dinner : TBA

I personaly think they are wonderful all by themselves. He needs them dressed up a bit. We got this new kind of chicken sausage from Costco yesterday that tastes like the most delicious hot dog you've never had.....I mean I shouldn't really compare it with a hot dog. Strawberry Shortcake I made a recipe of vanilla pound cake (cut down on the eggs and put in half olive oil half butter...Sasha still won't eat it because of the eggs) Made muffins and used those for the shortcake part. I whipped up about a year's supply of whipping cream in my Bosch. Used some of that on top of the shortcake with cut up strawberries..heaven. I'm putting the leftovers of the whipping cream in my freezer to use over the next few months or so for anything that could use some cream....I love cream. | |

Dinner: Leftover mashed potatoes (we had a lot leftover because Daddy wasn't around to eat most of them and I just so darn used to cooking for him) and....whatever else the kids felt like...bread and jam, oats and milk.....smoothie popsicles I made this morning. Then we went to the park after dinner and brought along our huge bag of baby carrots from Costco and they had millions of them. I always used to bring fresh veggies to the park. My kids will munch on anything when they are happily playing..so I sneak in more veggies that way. I didn't have much of an appetite tonight but was hungry...perfect recipe for a blood sugar crash and no husband around......so sorry for myself. ....I know that they are having a time and I wouldn't interfere for the world....enough chatter....night y'all

Breakfast: Oatmeal w/ raspberries and blueberries Lunch: Turkey wraps (I buy the natural deli version without nitrates) and whole wheat tortillas at Walmart. I love these tortillas because they are a good price 2.04 and they actually stay together. I've bought ones at the health food store that crumble as soon as you bite into them. sides: cantelope/organic sesame street crackers ( also from Wal-mart...a treat to get the kids to behave for the grueling Wal-mart shopping trip) Dinner: Green salad, avocado wraps, leftover pancakes, peanut butter and jelly sandwiches. We kind of all did our own thing tonight. Sasha and the little boys had avocado wraps. I had leftover pancakes and salad. Benjamin had cereal and the girls ate pb and j. |

I always stretch the meat by mixing the turkey and buckwheat. Breakfast: Raw oats w/ macademia nuts, almonds, sunflower seeds and berries (well at least that's what I put in mine...feeling like I needed a bit more protein this morning) Lunch: Annie's Cheesy Ravoli (it's a brand of canned ravoli's from good earth...I was away all morning scrapbooking with my friend and got home late) note...half of my children didn't really liked the canned taste..which is actually a good thing. I hardly ever feed them canned anything and they have good little taste buds that know the difference between canned and fresh. Dinner: Grilled Cheese Sandwiches sides: green salad (Julia has been begging me for salad..I bought some vegan ceasar dressing and she and Joseph love it) Sasha does not eat cheese so this wasn't appealing to him. I've decided that if he's had his typical lunch already which is nuts, berries, dates and soymilk and I make something for the other meal (be that dinner or lunch) that he doesn't eat..then I'll make him an avocado wrap. It's quick for me to do and I feel good about it. He's perfectly willing to make himself something else but I do like to help him out if I can.

Breakfast: Oats w/ bananas and macademia nuts
Lunch: Free lunch at Macey's grocery store. They did this promotion that if you did some healthy activities and ate a healthy meal then you could come to the store for a free lunch. They served: Barbeque chicken, mashed potatoes, corn and salad. It humored me a little bit what their idea of healthy was...they even served soda and dessert at the meal...I guess I figured they could have just had fruit and juice. It was so nice to sit down and be served....all for being healthy...fun! Dinner: Different types of wraps (can you tell I'm on a food lag with the wraps......hey it's summer...who wants a hot kitchen...) I had a Barbeque Chicken Wrap and the boys had the ol standby Avocado Wrap. |

Breakfast: oats and berries (fresh...went to Costco again yesterday...I love that store) all except Jenny...the darling child begged me to give her jobs yesterday so she could earn money..since we'd had a busy weekend and didn't get our normal chores done I was of course more than willing. She vacuumed and dusted the entire upstairs and earned enough to buy herself a box of cereal at Good Earth which she will eat with great relish and delight in front of all the other children for the rest of the week. Joseph didn't finish breakfast because a spider appeared at the table....We need to get out of the house today.... Lunch: Rotini Pasta w/ meat sauce sides: Green salad/ baby carrots Dinner: Cheesy Adzuki Bean Casserole (my kids will eat almost any leftovers if I make it into a cheesy mexican casserole...added some salsa, garlic and cheese and they loved it) sides: grapes Dessert: Cherry Cobbler as soon as we finished our lessons yesterday my kids raced out the door and picked a huge amount of cherries. Then we spent the afternoon pitting them and checking for ...well...you know..extra unwanted protein. I think Julia and I were the biggest fans of the result. Joseph liked it too but Jacob..the kid who eats pretty much everything wouldn't touch it. I think maybe just maybe he actually doesn't like cherries.

Breakfast: The baby must be growing muscles or his brain is developing or something..I have not been able to stomach oats for the past few days and have been craving Breakfast Burritos..I finally got to the store and bought some eggs and had two and a half burritos with cheese and chicken sausage. Then I finished it off with some Cherry Cobbler and cream. I'm looking forward to feeling great this morning. I was so weak yesterday and could barely keep up with my kids at the library and had to strap them in the stroller and let them fuss....very not fun. Lunch: Lentils and Rice Green Salad after my huge breakfast I wasn't hungry until about 3:00 in the afternoon. I still fed everyone but not until much later than normal
Dinner: Homemade cheese and chicken sausage pizza green salad The salad we will be eating this week is the basic spring mix they sell at Costco...it's great because it is prewashed. I always have a hard time feeling like I've washed the lettuce enough. The salad from Costco is alot of salad for only 4 dollars...it will give us enough for salads a couple of times a day and maybe smoothies for a week for my big family. Sometimes we eat it straight. Sometimes with dressing or other veggies. |

Breakfast: Fourth of July Pancakes (strawberries, blueberries, cottage cheese) I am proud to say that my darling Benjamin made the pancakes all by himself...He even ground the flour fresh(the dear woke up at 6:30 so we could have our picnic breakfast while watching the balloons rise over the mountains) Lunch: Baked Potato Bar...I've been looking forward to this.... toppings: cottage cheese, grated cheese blend, sour cream, corn, green peppers, tomatoes, onions, spring mix salad blend, broccoli, salt, pepper, ranch dressing, ceasar dressing, barbeque sauce (don't know if anyone will use this..we'll see)..umm...I think that's it....I can't wait..they are taking forever to cook Dinner: Bagels and Cream Cheese i didn't eat too much because i was still full from lunch. Somehow all of my children were hungry so we actually ate this meal way earlier than I was planning. I was thinking we'd have it as a late night snack type of thing when we'd finally digested our huge lunch....I guess I'll have it for a later snack when I've finally digested those huge potatoes I ate. By the way..I did try the barbeque sauce with the potatoes. I think I actually put a little bit of every topping on mine. It was all delicious. |

My definition of food lag is when I find a recipe that I love so much that I keep making it again and again) Dinner: Rice and milk (well at least my three little ones had this...they love rice and milk and cinammon and agave...our sugar...for a yummy comforting dinner) |

Breakfast: Oats and granola i haven't made it up for breakfast yet but I've already had like 3 1/2 nectarines. I was a little hungry when I got home from my run. BTW...those of you that live in Utah Valley or thereabouts should check out Allred's fruit stand in a couple of weeks here. They sell the most amazing nectarines and peaches. Being the cheapskate I am I love to buy their boxes of seconds...or slightly weird looking fruit that they sell in a big brown box for only $5....it's about 20-25 pounds of fruit. I have a friend who buys it for canning. She came over one day and I fed her children some fresh peaches for a treat. She said, "Oh...I've never given them any fresh" and I said, "Well, my children will probably never eat them canned. " Not that I don't like canned peaches but 1. I'm not really into canning as much as she is and 2. We eat them fresh so fast that we don't have time to can them...I also love making cobblers and that uses up a lot of the fruit. Lunch: Buckwheat and guacamole Dinner: Fix your own...Jenny is having raisin bran, Joseph and Jacob wanted cheese sandwiches...the rest of us gave into the temptation of the wating cherry cobbler...the last for the year since our cherry tree has been picked to the bone (except for those really high branches that I'm too chicken to watch my kids climb up to...I invited a neighbor's child that I don't like very much and likes to climb)

Breakfast: granola, oats and yogurt Lunch: Brown rice and chicken nuggets. I cut up some chicken breasts and roll them in olive oil. Then I stick them in a bowl of flour, garlic powder and salt (Today I'm doing 5 breasts and will use a couple of cups of flour to make sure they get nice and coated)..tsp of garlic, tsp of salt. Cook at 350 for 30 min then turn up to 400 for the last 15 to brown them. I usually spray the cookie sheet I use so they don't stick. Dinner: We went swimming and then stopped by Great Harvest Bread to redeem our coupon for a free loaf of bread. While there we bought samples...the lady cut them real thick...for awhile I thought that could be dinner and I'd feed them some sort of snack when they begged for one later. They said they were hungry when we got home....so...I poppped some popcorn. We had two kinds: Caramel and Parmesan (for the caramel I boil 1/4 cup of agave and pour it on top of a big bowl...it really covers a big bowl and tastes yummy..see my recipe section) Caramel Popcorn, Parmesan Popcorn great harvest bread slices and juice

Breakfast: oats, granola and yogurt ( I added berries and macademia nuts to mine) Lunch: Tuna wraps sides: tortilla chips, strawberries and leftovers from dinner...popcorn :) Dinner: French Toast w/ berries We were gone fishing today and would have had a salad on our wraps if I had been more organized...I wasn't...a day without veggies feels weird..should I feed my kids salad for a bedtime snack...or give them the leftover homemade ice cream in the fridge. Do you think they'd notice if it turned green suddenly? I just have to say that we had a wonderful day driving out to Strawberry and sitting by the lake was the most delightful experience of the summer yet....gorgeous air...delightful lake breeze..the kids were happy wading and throwing rocks in the shallow water. |

Breakfast: oats and granola w/ yogurt Lunch: Parmesean Pasta sides: green salad w/ fresh garden green beans and zucchini the first of the year...delicious. Dinner: Steamed Red Potatoes, Steamed Yams w/ buttter fresh garden zucchini slices I never realized how much I enjoy sliced zucchini when they are little and you can eat them like a cucumber. In the salad at lunch they had some dressing on them and were chopped up small. Tonight I ate them straight and enjoyed the mild taste.

Our little Jacob loves yogurt and asks, "more nummies" at every breakfast. I have made my own yogurt before but I find buying the natural brand that has a sugar I approve of to be just as cheap as making it. | | Breakfast: Oats, granola and yogurt No pancakes or waffles this morning. I often make them on Sundays because we don't have church until 11 and I actually have time to cook breakfast. However, Jenny fell out of the new bunk bed that we bought her yesterday and woke us up early. She is fine but we've installed an extra railing thing now so hopefully that won't happen again. We eventually went back to sleep and slept in later than normal. Lunch: Fix your own. I had leftover mashed potatoes with salad and BBQ sauce on top. The kids did their own thing and the little boys had sandwiches. Dinner: Buckwheat and Sweet Mesquite Chicken Bits sides: Garlic Biscuits (made entirely by Benjamin) and Green Salad (with more green beans and zucchini) I often don't feel like making anything Sunday for dinner and whip up something really really easy. I like to follow the day of rest thing for religious and worship purposes and also for renewal. I cook for my family because I love them and I'm learning to enjoy it..but I'm human and definitely get burnt out with the kitchen scene day after day. I try to make it mentally manageable by not doing too much every single day and only making bigger or more complicated things when I'm in the mood and it will be a pleasure and not a chore.

Breakfast: oats and granola Lunch: Turkey Burgers (Joseph's request) I had green peppers, onions, pickles, organic ketchup, grapeseed oil mayo-which is way lighter tasting and very yummy, BBQ sauce and some kind of dark green leaf from the spring mix I buy at Costco) I also made homemade buns again. I was thankful they turned out soft and perfectly shaped this time...yay! Dinner: Potato Supreme I'm not sure exactly what to call it..I took 2 baked potatoes, 1/4 cup sour cream, 1/4 cup cheese, 1/4 cup milk, a couple of chicken sausages minced, and a few broccoli florets minced and created what I thought was a great dinner. My kids spied it with caution but most of them enjoyed it..I do have some picky eaters that simply have bad attitudes..despite my intolerance of pickiness..they persist.

Dinner: Fruteos cereal (looks like fruit loops...DOES NOT TASTE LIKE IT...but my kids don't know that so they loved it) I had some of the homemade bread I made this afternoon with PB and J since I just can't eat fake fruit loops that just taste blah...most of the healthy versions of stuff really tastes yummy or even better...not this....I bought two boxes of it on sale and I think we'll use the other box to make cereal necklaces....an experience every child should have a least once in awhile. | |

The dressing I make for it is so easy and my kids LOVE salad with this dressing. I simply put on about a 1T of veganaise (it's grapeseed oil mayo that is very light and very good for you) and then about 1/4 t of garlic powder. It gives it a ranch dressing type taste for pennies and my kids adore it. They also LOVED the cucumbers. I picked two for the salad and ended up with half of one. They were begging me to cut up more....and I love that. Dinner: Blini..okay...here is a Russian recipe that I healthified. Blini is the Russian word for crepes. There is a cult in Russia that judges a woman by her blini..the thinner the better..she has to be able to flip them just right...and of course they have to be perfectly round. I make this recipe in my family sized rectangle electric skillet. The first time I made them Sasha (who usually is pretty oblivious to what food looks like) laughed and said, "A schto za blini?" Meaning loosely...what in the world did you do to those blini? Ah...well at least my kids can enjoy the joy of blini without mommy standing over a stove for 2 hours...this version cooks up in about 20 minutes..Yay! I'll post the recipe later..gotta go read stories to my kids. |

Breakfast: Oatmeal and berries Lunch: Lentil Casserole (yummy..I finished off the lentils and rice in a delicious casserole....I put in corn tortillas, tomato sauce seasoned with cumin and garlic powder, corn, cheese and of course the leftover lentils and rice) I layered it like lasagna and put it in the oven for 40 minutes...oh..I forgot I also added some sour cream..finished off the container that I'd bought for the baked potato bar. sides: baby carrots Dinner: Homemade chicken sausage and cheese pizza (every time I go to Costco I have to buy the chicken sausage and every time I buy it I have to make pizza....so here we go again) sides: Big fat green salad...I'm starting to crave these which is good for me because I'm not really a salad eater....with garden cucumbers...yum. Dessert: Cinnamon Rolls (homemade...made the dough along with the pizza dough..I used to dread baking things like cinnamon rolls or any yeast based bread because I never felt like it came out quite right...I love my Bosch...I've been baking happily ever since I got it) |

Breakfast: Oats and granola w/ berries Lunch: Salmon and steamed red potatoes sides: cucumbers and baby carrots Dinner: Garden Vegetable Chicken Soup So only one of the veggies in the soup was from our actual garden but it still sounded like a good name for this soup. I used a box of free range chicken broth, 2 boneless skinless chicken breasts cut up, 10 baby carrots chopped, 2 medium potatoes chopped, 1 clove of garlic minced, 4 green beans chopped, and about 1/2 cup of frozen corn. I brought it to boiling and simmered it for 30 minutes. My kids adored it especially since we hadn't had soup for awhile. Dessert: Carob Party Cake w/ whipping cream frosting...it was Jacob's 2nd birthday today...he liked the cake and present part but got really annoyed at us earlier in the day when we kept singing happy birthday to him all the time. |

Breakfast: oatmeal Lunch: Red lentils and rice ( I cooked them together and added a bunch of different types of herbs..sage, parsley, coriander and garlic powder. You can basically put in any herbs you want...red lentils cook up very creamy...I love lentils)
sides: baby carrots ..I'm kind of being stubborn in the veggie dept. I didn't buy many this week because we should have some from our garden in a couple of days...
Dinner: Lentil Mexican Casserole (this is kind of similar to one I made last week..layers of corn tortillas that I broke up by hand, tomato sauce seasoned with cumin and garlic, cheese, frozen corn and of course the lentils and rice from lunch...my kids LOVED it) The lentils and rice is a great filler food for casseroles, wraps, I know some people make salad type meals with them. I've made lentil burgers many times but Sasha stopped liking them and the kids are happy eating them in the non-burger form...which is much easier. It is also a DIRT CHEAP meal..I haven't done the math exactly but when you buy in bulk (even with the rising prices it is still cheaper to buy in bulk if you are disciplined enough to eat your bulk food). For LDS people out there this is such a great food storage food. I like beans but I am so bad about remembering to soak them and then never seem to have time to cook them the next day if I don't soak them. I go through phases of being good about beans and bad. Lentils are so easy..no soaking...they cook in roughly 30-40 minutes. And they can be enjoyed with almost any spice or herb you like...very versatile. | |

Breakfast: Oats and granola Lunch: Historical first picnic on my masterpiece picnic blanket...I'm so sorry I haven't figures out how to post pictures because it is a lovely quilt I designed myself. We had: Cheesy Quesidillas (on corn tortillas..I like these because you can get a bunch for cheaper than wheat tortillas) sides: juice boxes ...this is very exciting for my kids because they are expensive...and baby carrots. Dinner: Garden Veggie Chicken Lentil Soup I used the rest of the lentils and rice (which is also great for soups) and added carrots, green beans (from our garden), zucchini(from our garden), chicken broth, and chicken. I have to admit that I burnt it a teeny bit but it was luckily still edible but not as wonderfully delicious as it would have been. Dessert: Watermelon and then later soy ice cream bought by Daddy to celebrate Pioneer Day and the marathon he ran in the morning.

Breakfast: Oats ..I had mine with bananas and macademia nuts. I'm actually still hungry so I'd better go eat more..the baby must be having a growth spurt. The other day I had to keep filling my bowl up like 6 times before I felt I'd gotten enough. I try to be sensitive to this and eat until I'm full and stop before I'm overfull. Unfortunately my stomach has times where it's tiny and I eat a little bowl of something and I'm stuffed. its a weird pregnancy thing I guess. Breakfast: oats (but some people had leftover pancakes) Lunch: Oh..I broke down and we actually had PB and J today. I'm not sure why I avoid this but I guess I feel like it's just not a meal that gives me what I need. I'm more of a bean/meat protein person. Anyway, we had the sandwiches in the car on the way to a million errands today. Not even a few minutes to spread out the picnic blanket.
Dinner: Bean Soup This soup turned out great. I simply added chicken broth, a couple of cut up chicken breasts, garden zucchini and salt. My kids loved it and it filled our tummies. sides: garden cucumbers....we are getting lots this year..yay..last year we only had a few and it was a bummer because I was all psyched to can pickles. No can can this year...I just won't do that pregnant. It's too much of a strain. Dessert: Coconut Pudding I think I forgot to mention the fabulous raw frozen coconut pie I made the other day. My friend gave me the recipe and I LOVE making it. I used the three leftover young coconuts from the pie. I always buy a few extra because we love coconut and I might as well buy a lot once I'm at the Thai store that sells them for cheap. For the pudding I hacked open the coconuts with my huge knife I bought at the Thai store. (that's the part I like the best....) Then I pour out the coconut juice (which is soooo good for you). I scrape out the coconut meat and put it in our k-tec blender with a squirt of lemon juice, a handful of blueberries and a couple of T of agave and coconut oil. Blend it up and serve it immediately or chilled as coconut pudding...soooo good. |

Breakfast: oats and blackberries Lunch: adzuki beans and barley sides: garden cucumbers Okay..I have to say I'm a so proud of myself when I make what I call a "food storage/garden" meal. When something I serve my family is nearly 100% from food storage and the garden I feel like a proud Latter Day Saint girl.
Dinner: I'm thinking of making calzones for dinner tonight...with cheese and chicken sausage filling. Same idea as pizza just a little twist that my kids will probably think is cool. We'll see how I'm feeling...maybe need to rest this afternoon because I've been a busy bee this week and ran a little faster this morning and yesterday...gotta watch my pregnant legs now that I'm in the third trimester. Dessert: Zucchini Muffins I will definitely make this no matter how I feel. I've got two beautiful Zucchini from my garden waiting to for me to make them into something delicious.
Note: I made the calzones and the muffins all in one tornado and then spent a hour on the couch recovering...Sasha saved me from the couch and took me house shopping...we aren't moving but we like to look for fun. I told the kids that mommy and daddy were having a date and we just happened to be taking them with us...they weren't too thrilled to be thrown in the car just to drive by some houses. The Calzones were SOOOOO delicious and even though they were a little bit of work I want to make them again...like tomorrow... | |

Not bad but not my favorite..I really like raisin bran and this kind called puffins. Dessert: My favorite cookies at Good Earth were on sale and I brought some home. I can eat an entire box by myself..they are soooo good.

Breakfast: Oats Lunch: Buckwheat sides: garden cucumbers Dinner: Garden Veggie Lasagna Supreme I'm pre-blogging this today so I'll just tell my idea for the recipe and then maybe I'll actually look one up on-line to help me not mess this up. My idea is to saute some zucchini, squash and green beans together with garlic and some other spices I haven't decided ye. I'll have that be the bulk of my lasagna. I'll add grated cheese and some chicken sausage in the layers and call it almost vegetarian but very good for using up garden veggies. I'll let you know how it turns out. Okay..I looked up some recipes and am trying the crazy and cool idea I found online. You actually use the giant zucchini from your garden sliced up as the lasagna noodles....I did that and then made a tomato, squash, green bean, and italian spice sauce in the blender which I poured over the "noodles" I added the sausage and cheese to the layers. It's still cooking...I may steam the "noodles" first because it's going on 2 hours in the oven to achieve the tenderness I was looking for and that's a bit long for me. Okay final comment on this venture. It tasted great..I got impatient and took it out before it reached it's full tenderness so it would have been a little bit easier to chew if I'd cooked it until really really tender..all in all it was a success.

I have some kind of exciting news. I was contacted by the director of diabetic research at New Mexico University today. They are putting together a cookbook for diabetics as part of their extension services and wanted to use some of my recipes. It kind of gave me a kick. | |
| | Breakfast: oats and milk Lunch: Picnic in Salt Lake with my sister and her 5 kids. We had bean burritos, baby carrots, baked cheetos and apples. It was a free lunch program for kids they do during the summer. (to make sure kids are fed by their parents during the summer I guess?? ) Dinner: Apricot Muffins and Pina Colada Banana Smoothies. I got a million apricots from a friend..made it into a bunch of syrup..that I planned on using on top of waffles. My kids don't really like the syrup so I used it to sweeten and liquify the muffin batter I made this morning. Worked like a charm. Then I went to my favorite store this morning and they had my dream come true...a box of bananas(like 25 pounds or so) for $6.00..yay!!! I also bought some juice for cheap and we are going to have smoothies and banana bread galore this week. |

Breakfast: oats and banana smoothies (we will be having lots of banana things this week to eat up our bananas) I will also freeze some of them. Then I put them frozen in our K-tec awesome blender and it creams them into an amazing banana ice cream. I add a tiny bit of soy milk to it and that's it. It's really sweet and creamy. Lunch: Tuna Sandwiches We now have an overload of bread. I went to my favorite store in Salt Lake yesterday that sells the bread we buy at Costco for 3.00 for only 1.00. I've stocked up and am very happy. We really don't eat sandwiches very much because it's a pain to bake that much bread and it's expensive to buy the kind we eat. Also I still feel like I get more full and feel better after a cooked meal with whole grains, beans or meat. But if I have the bread and it needs to be eaten I'm happy to have a easy meal of sandwiches. Maybe we'll have French Toast for dinner tonight...we'll see...I'm still deciding. Dinner: Pasta and baby carrots...soccer season is here and I need to get organized. It should be better this year because his practices are at 7 at night instead of the insane hour of 5...dinner time..or dinner making time at least. 7 will be great and then there's the games to figure in but Daddy helps out a lot by taking Benjamin to a lot of the games so that helps. | |

Breakfast: Peach Cobbler....I LOVE August and I love Allred's fruit stand in Provo that sells me a huge box of peaches for $6.00. Someone amongst the craziness of going to a water park in the afternoon and soccer in the evening I managed to whip up some peach cobbler. We loved it for breakfast this morning and I'm sure it will be gone by noon tomorrow. Lunch: Yummy Supreme Harvest Blend (this would be lentils and rice topped with a fabulous garden sauce- I sauted garlic and onion in some olive oil and added tomato sauce, chopped zuhcinni, squash, and green beans. It was delicious) sides: Yummy Supreme Havest Salad- chopped squash, zuhcinni, cucumbers, and tomatoes with a light olive oil/garlic dressing...superb.

We'll see how proud I am when we try eating it. I got the idea from my mother-in-law who is an excellent cook. She knows how to make anything taste wonderful and always prepares us delicious meals when she is here. She took some of the zucchini from our garden and...pickled it!! I'd never in my life thought about it but it is actually a great thing to do with lots of zucchini and it is the only way Sasha will eat the stuff. I did a conservative 5 jars because I'm just trying it out and I didn't can it so it's just sitting in my fridge. I liked the taste of the brine I made so I think it will turn out well. |

Breakfast: oatmeal..can you feel fall in the air..oatmeal is always so comforting but I usually opt for oats because it's easier to not cook them Lunch: Lentils and Rice seasoned with Braggs and topped with salsa sides: nectarines, cuke and tomato salad Dinner: I'm contemplating making a fun dish that I've never made before to use up some squash from the garden . It will have potatoes, squash, cheese and turkey bacon as the main elements...we'll see how it turns out and if my kids will eat it. I did make it and I sauted some onions before I baked it all up. It was DELICIOUS!! I'm making it again tomorrow!! |

Breakfast: Carob Apricot Raspberry Waffles (homemade carob and apricot sauce on top of whole wheat waffles with raspberries on top...this is a fabulous combo!!) Lunch: Potato Squash Turkey Bacon Casserole( I think I'm going to add this one and the one on top to my collection of Sarah recipes...I'm having a good cooking day). I sliced about 7 small red potatoes potatoes potato chip style, diced the medium sized squash (which I grew), diced about 4 slices of turkey bacon, sauted about half an onion , added about 3/4 cup of cheese (some throughout, some on top) and baked it for 45 minutes in the oven at 350 or until it's bubbly and the potatoes and squash are tender. yum yum Dinner: hopefully something easy..I'm bushed We ended up just having oats and milk or whatever else you wanted to fix yourself....I can only cook so much in one day. ;)

| | I totally got off a day because of Labor Day...so I didn't even blog the delicious breakfast that Marion made us and the yummy lunch we ate out at an Organic restuarant in town...oh well. | | Time to cut down on something...and that is this recipe blog for awhile. I am now 33 1/2 weeks pregnant and I'm cutting some things out. Thanks to all of you who have diligently checked out what we crazies eat everyday. I'd like to collect healthy recipes from all the bloggers and maybe make a blog cook book that will inspire all of us to eat more whole foods....maybe that will happen before the baby...maybe not. Just a couple of fun ideas for today. If you have a poweful blender(we have a K-Tec). ...I've been making this delicious banana ice cream out of frozen bananas and soymilk. I put much less soymilk than I would for a smoothie and it comes out thick and frozen and sweet.....just like ice cream should be. Jenny, our 8 year old, made some really good trail mix today. The addition that I thought was super yummy was a little bit of puffed wheat. She also got the proportions beautifully. She made one serving for herself and put about a Tablespoon of the following ingredients in (for a crowd I'd put in 1/2 to 1 cup of each) pumpkin seeds, sunflower seeds, flame raisins, puffed wheat, carob chips, and peanuts..oh and she said she sprinkled a little peanut butter on top. It was good. I think we'll be making it for our camping trip this weekend. Best of luck to all you healthy eaters out there. | |
| | HEY! I'm not really officially back since I just had our little Willy Billy Baby Boy 12 days ago but I may post things here for fun now and then. I am feeling pretty good so I'm trying to contribute to the household here and there and I made fresh applesauce for a snack. I love having a powerful blender. I just cut up 5 or 6 apples and put in about a cup of water and presto..you've got applesauce. I also like making warm applesauce on the stove but you really need to peel the apples for that and don't have to with our K-Tec blender. I felt accomplished but didn't feel like I'd overdone either...have a good one. |
