Breakfast: Oats and milk Lunch; Pita Pockets (homemade pita pockets stuffed with adzuki beans and barley, garden tomatoes, salsa and cheese) Dinner: Raisin Bran...needed something easy..making pita pockets is more involved than I usually do..although it was pretty simple it just adds more time and more clean-up. I have some kind of exciting news. I was contacted by the director of diabetic research at New Mexico University today. They are putting together a cookbook for diabetics as part of their extension services and wanted to use some of my recipes. It kind of gave me a kick. |
