Joe - 6:14, 5:56, 5:45, 5:35, 5:28. That's a pretty damn good run for me these days! I feel like I didn't quite get down to FiletMignonish, but I'm moving in that direction.

That is definitely good but don't get ahead of yourself. You still have to get through chuck roastish, sirloinish and ribeyeish before you can start thinking about filetmignonish.

Excellent point. There's a big range. FiletMignonish pace is probably in the 4:40s. I really need to iron out the meat-pace conversions. And where do other species fit into the spectrum? Copper River Salmon? Ostrich? Elk? Eagle?

I think allie teaches a class that covers this topic so maybe she can help us figure it out.

I'm a Texan, so anything other than cow is irrelevant, but I would assume the other species would involve race walking or rhythmic gymnastics.

I would like to add roadkill pace to this list please. It's the equivalent of my hard earned 9:45-10:15 miles. Well, technically its like moving road kill but you get the idea.

I'm noticing that there's a relation between my beef pace and my economic status. Or maybe it's just a correlation and not direct causation.
