No running today, just tennis! I did, however, bake "Jesus cookies", well that's what I was calling them because they were for church. I took an oatmeal chocolate chip cookie recipe and made it a little healthier and changed the chips to butterscotch because that's what I had. They were a hit, although somewhat crumbly off the pan. Once they sat around an hour or two they held together fine. No one missed the butter! This made 27 cookies for me, but was supposed to make 30: [Relatively Healthy] Oatmeal Butterscotch Cookies - 1/3 cup applesauce (the recipe called for butter here)
- 1/2 cup brown sugar
- 1/3 cup white sugar
- 1 egg
- 1 tsp. vanilla extract
- 1 cup white whole wheat flour (i only had whole wheat and white, so I did half and half)
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 3/4 cup quick cooking oats
- 3/4 cup dark chocolate chips (i did butterscotch)
Preheat oven to 350 degrees. Beat butter and sugars with an electric mixer. Beat in egg and vanilla. In a medium mixing bowl, stir together flour, baking soda, salt and cinnamon. Stir flour mixture into sugar mixture until well combined. Stir in oats, then chocolate chips. Spoon dough 2 inches apart on ungreased cookie sheets. Bake 10-12 minutes.
