I have raised two running children, one competitive and one not.

I have learned to run in ice and snow and I don't complain.

Short-Term Running Goals:

Work towards a faster marathon by Spring 2012.

Get my 5K down to 21:30.

Place in my division at duathlon and triathlon.

Train for biathlon.

Long-Term Running Goals:

Joining Forrest Gump

Did the morning run, and I'm on the way to yoga!  I'll post later about the afternoon run, since I'm not sure yet what it is supposed to be.

In between, I've got a truckload of applesauce to make.  I have to share my apple trees with the deer, but I still have an awful lot of them.  They make great sauce and pie, but how many apple pies can a person eat?

HMmm good guestion... I think I could eat quite a few, especially if I had some ice cream and the pie was still warm!! Now that I'm gluten free I need to see if I can find a good pie crust recipe

Applesauce! Good idea. Most of our apples are left to fall to the ground, and then I chop them up with the lawnmower. Such a waste.

I'm just finished my peaches (still feel the stickiness), waiting for my pears to get just a bit more ripe (hopefully Monday), putting the spaghetti sauce away, and doing apple pie filling, apple butter on Saturday (then apple fritters for desert). I have 2 big buckets of green beans too.....

This is always such a busy time of year garden wise!

Wow, this is cool to be amongst so many gardeners/food storers like myself! This whole process of putting food away like a squirrel helps me keep in touch with the changing of the seasons. I am trying to deal with the zuchinni next.

I made a really yummy veggie lasagna last night that includes lots of garden veggies.

Lasagna noodles

Marinara sauce

Ricotta cheese mixed with 2 eggs and parm. cheese

Sauted zucchini, yellow squash, mushrooms and slivered carrots - garlic too.

Layer 2-3 times - 1/2 c sauce, noodles, ricotta mixture, veggie mixture, marinara sauce, shredded moz. cheese

Bake 350 50-60 min covered, 10 minutes uncovered. Serve with garlic bread - DELISH!
