Was planning on running an easy 5 but decided to take an extra rest day instead. With TOU 1 week away I am erroring on the side of caution.

Are you feeling like you might get injured? If not, it is better to still jog some even if you feel the need to rest - 2-3 miles at 9:00 pace to get the blood going, to keep the fat off, and to keep the mind clear.
Both achilles have been sore for a few months. I thought that getting an extra rest day might help with the soreness.

In that case some light cross-training might be good.
