I am going to be in Hurricane, UT for Thursday, and Friday for Thanksgiving and would like to run with someone, or a group and Thursday and Friday.  I am not from there so I don't know any courses and running routes.  I was thinking of running between 6 to 8 miles but distance is up for grabs.

I recommend "Explosive Running" by Dr. Yessis.  He spends a few chapters on running mechanics and form and uses stop action photography for examples.  Also provides great information on running specific exercises.
