Is it better to get really close and do lots of points, or is it better to do the fewest segments?

Get as close as you can, but make sure you do the tangents right. The more points you have, the more accurate the elevation profile would be. That would make the course a bit slower to load, though, but this usually is not a big problem.

I think that there is a fallback to doing too many points though. Lime sasha said, it's good to remember tangents, and also you need to remember that when you actually do the run that you mapped out, you may cut corners and do other things that would shorten the run.
