Allie and I are looking around for a good race to go to in May, June or early July. Something that we could drive to, but not something along the Wasatch Front.
Preferably not in Utah at all.

There are a lot of options, but it would be cool if we could get some recommendations.

Current thoughts:

Jackson is a phenomenal place. There are very few mountain ranges that can absolutely blow away the Wasatch front... the Tetons are one of them. Hard to beat going there. You wouldn't regret it for a second.

Central Colorado (I-70 corridor) b/w Eagle and Breck/Frisco is good road trip territory as well. There are tons of races in CO every weekend (RunColo.com). Lots of good stuff to see and do wherever you end up around there.

If you like to flyfish it'd be hard to beat the Sawtelle Stampede. Henry's Lake is right at the base of Sawtelle Mt., Henry's Fork, Island Park Res, the Madison and the Park is 20 minutes away.
