In Need of Proper Winter Program for Me..

So it's great that I'm able to jog a bit pain free and I can bike and such. I just bought a wind trainer and have been using that in 30-45 minute blocks this week so far, but I am in real need of trying to come up with a structured program to build up my fitness so that maybe 2009 I can actually race?! Also, I need a diet. I want to lose ~10 lbs, and it's hard to not eat when you are used to eating a lot to balance the calories lost while biking/running. Anyone have suggestions?! Or a generator that can help give me a program?

I have a pair of xc skis, but there aren't that many trails around here that I know of. Maybe I'll have to do some research on that?
